Happy Thursday! My Thursday is happy for two reasons. One, hubby and I leave for Kentucky tomorrow to house hunt and two, it's Current Crush Thursday over at Framed Frosting!
This week (for several weeks actually) I've been loving quinoa!
This versatile little seed is a newcomer to my pantry. Pronounced Keen-wah, quinoa is often described as a rice substitue. It is so much more! Quinoa can be used as a side dish, stuffing, burgers, cold salads, burgers, pancakes, hot breakfast cereal...and so on!
What makes this little guy so special is that even though it's a grain, it's also a protein. Yep folks, your grain is a protein! This was very exciting news to me! However, I've learned that not only is quinoa a protein, it's considered a complete protein. Meaning it contains nine essential amino acids. Quinoa provides more vitamins, nutrients, and enzymes than any other grain out there. These facts have made quinoa a super food and a staple in my kitchen.
Quinoa is easy to cook. Like rice, you use a two to one ratio (two parts liquid to one part quinoa). Bring your liquid (water or flavored stock) to a boil, add the quinoa, and simmer 10-15 minutes. All of the liquid should be absorbed and you are left with fluffy, nutty, delicious quinoa!

I love love love quinoa. I've been a vegetarian for two years and quinoa is a great source of veggie protein...plus it tastes good in virtually every recipe. Try quinoa stuffed peppers, they're delicious! :)
I had no idea what this was but kept hearing people talk about it. I'm glad I know now. And now I'm hungry.
I tried Israeli Quinoa from Trader Joe's the other day because they were sampling it and they had it with red peppers and bruschetta and it was actually really good!

I am obsessed with Quinoa. I am always trying to find new recipes. My favorite is Quinoa with black beans and corn... YUM!!!
I have only tried Quinoa once I don't know how I feel about it yet but that dish look supper yummy. is it something you have made? do you have any food recopies for it?
